Chuck’s Southern Comforts Cafe in Darien Appoints Executive Chef & Sous Chef for new location

Darien, IL- Chuck’s Southern Comforts Cafe announced the hiring of Perry Kokotis of Darien for Executive Chef at it’s second location in Darien set to open later this May or early June. Perry brings with him over ten years of culinary experience including stints as Executive Chef at Benchmark Hospitality, Sous Chef at Hotel Affinia, C-House Fish and Chops, Sous Chef at Diplomat West Banquet, Lead Cook at Medinah Country Club, chef at VIE and as a chef at Pluton.  It is through his past experiences that Perry has adopted a strong passion for cooking and constantly striving to improve his craft.

Perry was one of many applicants who applied for the position and after the extensive search was narrowed down to six candidates, Perry was chosen to come to the Burbank location where he was asked to create an appetizer and entree for owners Chuck Pine, Maggie Coots and Jim Pine for a tasting, followed by a series of questions and answers. The decision for Chuck and company wasn’t easy as all six candidates brought such unique skills and creative dishes with them. But in the end it was the dishes Perry created that ultimately sealed the deal.

Chuck’s has also hired Roman Burnat of Northlake as it’s new Sous Chef. Roman brings years of cooking experience with him including his recent work as Sous Chef at Wynstone Golf Club, Sous Chef at Aramark Corporation, Executive Chef at Wyndham Garden Hotel and as Sous Chef at Medinah Country Club. Owner Chuck Pine was ecstatic about both hirings saying, “We have two amazing and talented chefs joining the team and I can’t wait for the people of Darien to see what we have in store for them.”
